The Good Tea Guide.

Preparing and brewing tea is a simple but essential exercise to make the most of the high quality delicate leaves.

WATER

Always use freshly drawn cold water. Spring or purified waters are the best because they are free from any pollutants that can alter the teas pure taste.

TEMPERATURE

This is a critical part of making a great tea. It is a popular misconception that all teas need boiling water. Green teas need a slightly cooler temperature because of the delicate processing they have been through to maintain flavour. Whereas most black teas need boiling water to help accentuate the flavour.

BREWING / STEEPING TIMES

Different kinds of tea need to be steeped for different lengths of time. This is a very personal part of the tea making process and you may need to experiment with this to find the correct one for you. Generally green and other delicate teas need a shorter steeping time than other robust leaves.

GENERAL GUIDE.
(USING A TEAPOT FOR 2 CUPS)

GREEN TEA
1 – 2 tsps for between 1 – 3 Minutes

WHITE TEA
1 – 2 tsps for between 2 – 3 Minutes

OOLONG TEA
2 – 3 tsps for between 2 – 3 Minutes

BLACK TEA
1 – 2 tsps for between┬á 2 – 5 Minutes

FRUIT / HERBAL INFUSIONS
1 – 2 tsps for between 2 – 3 Minutes

Of course everyone has their own personal way of making tea and this is only a guide. The wonderful thing about making tea is that there is no right or wrong way – Just your way!
I personally love a strong black tea so I leave them longer to steep. Good luck on your tea journey.

How to make Iced Tea

Basic Recipe using Loose Leaf Tea

  • Place 6 teaspoons of your chosen tea in a heat resistant jug or pitcher.
  • Add 1┬╝ cups of freshly boiled water and allow to infuse (brew) for 5 min.
  • Quarter fill a separate serving jug/pitcher with ice water,
  • Add the steeped tea ensuring you strain the leaves and fill up with ice water.
  • Sweeten to taste, or try adding some honey, cinnamon and slices of orange

Makes 1 Litre
